Pear walnut salad with maple roasted chickpeas and lemon vinaigrette 🍐🍁🍋🌱 Ingredients- rocket, two sliced pears, walnuts, avocado, vegan soft herb cheese, dried cranberries and @farmer.johns vegan jerky pieces.
To make lemon vinaigrette dressing just mix a good quality olive oil, lemon juice, apple cider vinegar, a dash of pure maple syrup and salt and pepper to taste.
To make the maple roasted chickpeas, combine two cans of chickpeas in a bowl with pure maple syrup, a dash of olive oil, a tablespoon of curry powder and a little salt and pepper. Combine well and layout on a lined baking tray, place in oven and bake on high for approximately 20mins or until maple starts crystallising. 😊💚
