Today's lunch Creamy Corned Beef with Veggies.
This is our first time to try @delimondo 's corned beef and it's the best one so far! It's fully packed with thick strands of beef and it's well seasoned.
I made this recipe to give a little twist than the ordinary sauteéd corned beef (since I love veggies). You can add other veggies like cauliflower, carrots, beans.
2 small red onions, sliced
4 cloves of garlic, coarsely chopped
1 medium potato, chopped
1 green bell pepper, chopped
1 small or medium broccoli florets, chopped
1/4 cup cream
1-2 cups water
1/2 cup oil for frying potatoes
380g Delimondo Ranch Style corned beef
Salt to taste
Heat sauce pot then add oil.
When oil is hot, fry chopped potatoes.
Once potatoes are fried, scoop out half of the oil and sauté onions. Add garlic and stir until fragrant.
Toss in bell pepper.
Add a can of corned beef, Delimondo preferrably. Stir.
Pour in 1-2 cups water, depending on how soupy you'd want your dish.
Pour 1/4 cup cream (I used Alaska Cremá). Stir.
Let it simmer under medium heat.
Season with salt according to taste.
